Date and Nut Bread

The nice thing about quick breads is that they they really are quick. This moist and delicious date and nut bread only took a few minutes to prepare and 50 minutes to bake.

Date and Nut Bread

  • 1 teaspoon baking soda
  • 1 cup boiling water
  • 1 cup chopped dates
  • 1 egg
  • 1 cup brown sugar
  • 1 teaspoon vanilla
  • 1 cup chopped nuts (I used pecans and walnuts)
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 tablespoon melted butter

Preheat oven to 350F. Dissolve the baking soda in the hot water and pour over the dates.  While it cools, beat the egg and then beat in the brown sugar. Add to the cooled date mixture and mix well. Stir in the vanilla, nuts, flour and salt, mixing well. Finally, stir in the melted butter and pour into a greased loaf pan (8 x 4 x 2.5) and bake for 50-60 minutes. Cool.

Nut breads often taste better the second day. Do not worry if there is a crack in the top…that often happens with nut breads.
