Chewy Oatmeal Raisin Cookies

My husband dropped some subtle hints about cookies the other day. Hints about oatmeal and raisins, and how well they went together and how he would really like some cookies. As I said, subtle:)

I have since made him a couple of batches, as they are really good cookies to add to a lunchbox.

Chewy Oatmeal Raisin Cookies

  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup oatmeal
  • 1 cup raisins

Preheat oven to 350F. Cream the butter and sugars together. Add the egg and vanilla and beat until fluffy. Blend in the flour, soda, baking powder and salt.  Sir in the oatmeal and raisins. It will be a stiff and slightly crumbly dough. Drop by the tablespoonful on greased cookie sheet and bake 12-15 minutes. Makes 2 dozen. You can make them thinner and smaller (therefore crispier) by dropping the dough by teaspoonfuls, and then pressing it flat. If smaller, can yield 4-5 dozen.

You can vary it by adding a teaspoon of cinnamon, or substituting chocolate chips, or coconut or chopped nuts for the raisins.
