My husband dropped some subtle hints about cookies the other day. Hints about oatmeal and raisins, and how well they went together and how he would really like some cookies. As I said, subtle:)
I have since made him a couple of batches, as they are really good cookies to add to a lunchbox.
Chewy Oatmeal Raisin Cookies
- 1/2 cup butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1/2 teaspoon vanilla
- 1 cup flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup oatmeal
- 1 cup raisins
Preheat oven to 350F. Cream the butter and sugars together. Add the egg and vanilla and beat until fluffy. Blend in the flour, soda, baking powder and salt. Â Sir in the oatmeal and raisins. It will be a stiff and slightly crumbly dough. Drop by the tablespoonful on greased cookie sheet and bake 12-15 minutes. Makes 2 dozen. You can make them thinner and smaller (therefore crispier) by dropping the dough by teaspoonfuls, and then pressing it flat. If smaller, can yield 4-5 dozen.
You can vary it by adding a teaspoon of cinnamon, or substituting chocolate chips, or coconut or chopped nuts for the raisins.
