Orange date cake is another old recipe of my Mom’s. Â It is glazed. so you don’t have to ice it, and it is pretty quick to make.
- 1/2 cup butter
- 3/4 cup sugar
- 1 cup chopped dates
- grated rind of one medium orange (save the juice)
- 2 cups flour
- 1 tsp baking powder
- 1 cup sour milk (milk with 1 tablespoon lemon juice added)
- 1 egg
- 1 tsp vanilla
- 1 tsp baking soda dissolved in one tsp warm water
Preheat over to 350F. Combine the butter and sugar. Add dates, egg, vanilla and orange zest. Add baking powder to flour and add, alternately with the milk. Lastly, stir in the baking soda dissolved in water.
Put in 8×8 or 8×13 greased pan. I like the glaze, so I make it in the larger pan…it’s thinner, but I get more topping:) Bake for 25-35 minutes. Then mix the juice of the orange with 1/4- 1/2 cup sugar and spread over the hot cake. Let it stand for about 10 minutes. If cut in 12 pieces, they will be 6 points each.
