This easy quinoa salad can be put together in a couple of minutes. It requires a bit of thinking ahead…I keep a container of cooked quinoa in the fridge to throw into salads. It is tasty, and is only 2.5 weight watchers points.
Toss in a container if taking to work, or on a plate or bowl if eating at home:
- 2 cups mixed greens (washed)
- 1/2 cup broccoli slaw
- 1/2 cup snap or snow peas trimmed and halved
- 1/2 cup grapes
- 1/3 cup raspberries
- 1 grapefruit or orange (peeled and cut into chunks)
- 1/2 cup quinoa
I don’t bother with dressing, as the grapefruit or orange provides enough moisture. If you do add dressing, remember that the points value will increase.
You could substitute spinach for the mixed greens, and use other fruits (strawberries, blueberries and peaches would be nice).
If you have never cooked quinoa, soak it for about 10-15 minutes, rinse and drain it. Then use 1 cup quinoa, 2 cups water and a dash of salt (optional). Bring to  boil, cover, reduce heat to low and cook for 15 minutes. There is a tutorial which shows three ways to cook quinoa here.
