Every once in a while I get a craving for the classic treats of my childhood: rice krispie squares and puffed wheat squares. They were the kinds of goodies that always showed up at potluck dinners, bake sales and at school parties.
The other day, I was poking about in the cupboard and came across an open bag of marshmallows and some of the Christmas themed rice krispies and decided that I really wanted some rice krispie squares.
Rice Krispie Squares
- 1/4 cup butter or margarine, melted
- 2 cups miniature marshmallows, melted
- 1/2 teaspoon vanilla
- 6 cups rice krispies
Lightly grease an 8 x 8 cake pan. In a large glass bowl, place the butter and marshmallows and heat in the microwave for about 1.5 to 2 minutes (until the marshmallows are melted. (If you do not have a microwave, melt the butter in a large saucepan and then add the marshmallows.) Stir in the vanilla, then add the cereal, one cup at a time. Press into the cake pan and let set.
I like to play with this. You can vary it by :
- adding 1/2 cup brown sugar to the butter, which gives it a slight caramel taste
- substituting cornflakes for the rice crispies
- adding 1/2 cup of flaked coconut
- adding a 1/2 cup of chocolate chips
I haven’t tried it, but if you do not eat dairy, you could try substituting coconut oil for the butter.
Have you made these? Do you change it up?
