Apple Roses with Puff Pastry

I keep seeing lovely apple roses on Pinterest, so today I decided to give them a whirl. I wanted to make something special for my husband, so I decided to make apple roses with puff pastry and make them into individual apple strudels.

Apple Roses With Puff Pastry

  • 2 apples ( I used Bramley, but many people choose red delicious)
  • 1/2 cup water
  • 1/4 cup sugar
  • juice of half a lemon
  • 1/2 package puff pastry
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 cup chopped pecans
  • 1 teaspoon icing sugar

Preheat oven to 400F. Mix the brown sugar, cinnamon and pecans in a bowl and set aside for the moment. I started by cutting my apples. I halved and cored the apples, then cut them in slices (about 6-8 per inch of thickness). Then I put them in a pot with the sugar, water and lemon juice and cooked for about 5-7 minutes, until they were softened.  I then strained them and rinsed with cold water to stop the cooking process.

Next step was to roll out the puff pastry into a rectangle about 8 x 10. I cut it into 6 strips lengthwise, and laid apple slices along the top edge of one strip, overlapping each piece successively. Then I laid a row of sugar/cinnamon/pecan mix along the bottom of the apple slices.

Next I folded the bottom edge of the pastry over the strudel mix,leaving the apple slices uncovered, and began rolling it up from the right side. This made my rose, which I put into a muffin cup. I had sprayed it lightly with cooking spray in case the brown sugar caused it to stick, but I think it would have worked fine without that precaution.

Put the apple roses in the oven for about 40 minutes. I use convection for even heat.

I put them on a wire rack to cool, then sieved a tiny amount of icing sugar over each one.

Just before serving I drizzled about 1/4 teaspoon of honey on top of some, and the same amount of dulce de leche on the others.

They were very tasty and quite pretty.
