Best Bran Muffins

Screen Shot 2015-02-21 at 10.47.27 PMThese are the best bran muffins I have ever had. They are also very versatile, and very forgiving. You can overmix them, and they do not get tough, unlike other muffins. You can vary the recipe, and make them a little different, just for variety.

Best Bran Muffins

  • 1 3/4 cups flour
  • 1 3/4 cups bran
  • 1/2 cup sugar
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 cup raisins (or cranberries, blueberries, apricots, dates, chopped apple, chopped pear, pineapple tidbits…)
  • 1/4 cup oil (or applesauce)
  • 1/2 cup molasses (or honey)
  • 1 teaspoon vanilla or rosewater (or 1 tablespoon cinnamon)
  • 2 eggs
  • 1 cup buttermilk ( or 1 cup milk with 1 tablespoon lemon juice or 1 cup sour cream)

Preheat oven to 400F. Combine the dry ingredients. Add the wet ingredients are stir until moistened. Fill greased or paper lined muffin cups 2/3 full and bake for about 20 minutes. Makes about 18-20 medium muffins.

You can add 1/4 cup sunflower seeds (or pumpkin seeds or chopped nuts) if you like. I find it a very pleasant addition.
