I love Chinese Coconut Buns, more commonly known (at least around here) as honey buns. They are a soft bun filled with a delicious coconut filling. I don’t have a recipe for them, but thought I could create something with a similar taste, so I did a little experimenting this weekend.
I used the same dough that I use for making cinnamon buns (recipe here). Instead of butter, sugar, raisins and cinnamon, I used the following:
- 1/2 cup sweetened condensed milk
- 1 cup flaked coconut
- 1/2 cup drained  pineapple tidbits
- 1/3 cup chopped glace cherries
(Preheat oven to 400F). I rolled the dough out as I would for cinnamon buns, then spread the condensed milk on top, covered that with coconut and sprinkled the pineapple and cherries on top. I rolled it up, jelly roll style, then cut it into 12 equal pieces and put them in a 9 x 13 buttered pan. Â I let that rise for about 45 minutes, then baked it for 20 minutes.
Both my husband and myself were very pleased with the results.
