On a hot day, this cold Asian noodle salad with peanut dressing, is both quick and easy to make, as well as being refreshing. It is also gluten-free for those who cannot have gluten in their diet.
For 4 people:
- 1/2 250 gram package of rice noodles (vermicelli)
- 2-3 grated carrots
- 1/2 cucumber, grated
- 1/4 – 1/2 cup peanuts
- 1/4 cup peanut butter
- juice and zest of two limes (or one large one)
- 2-3 tablespoons sweet chili sauce
- 2 tablespoons marmalade
- 1-2 tablespoons olive oil
- 1 tablespoon soy sauce
Put the noodles in a bowl and cover with boiling water. Leave for about 3-5 minutes, then drain and rinse with cold water. Add the carrot and cucumber. You can also add shredded lettuce or spinach if desired.
Combine the rest of the ingredients in a bowl, then add to the noodle mixture, and toss to coat.
Sprinkle the peanuts on top. Chill before serving.
