My daughter decided to help out again, and sent me this tasty recipe for fiesta salad. It is very colourful and bursting with flavour.
For one person:
- 1/3 cup black beans, rinsed and drained
- 1/3 cup corn
- 1/4 red pepper, chopped
- 1/2 avocado, chopped
- 1/2 tomato, chopped
- 1/2 cup shredded cooked chicken
- 2 tablespoons shredded cheese
- 5-6 tortilla chips, broken
Combine in a bowl, and toss with dressing.
Dressing:
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- garlic and chili powder to taste
Combine in a small jar and shake vigorously to mix throughly.
A classic vinaigrette has oil to vinegar/lemon juice in a proportion of 3:1. My husband and I find that too oily, so we usually go 2:1 or 1:1 if we want something a bit more tart.
