Another of those meals with ground beef, meatloaf is easy to make and easy to vary to suit different tastes. It is very quickly put together, and cooks in about 45 minutes.
- 1 pound ground beef
- 1/2 cup oatmeal/ dried bread crumbs
- 1 egg
- 1 onion, finely diced
- 1 teaspoon each salt, pepper, oregano, basil
- 1/4 cup sweet chili sauce
- 1/4 cup ketchup
Preheat oven to 425F. Combine all ingredients in a large bowl. If mixture feels very wet, add some more oatmeal or breadcrumbs to the mix. Press into a greased loaf pan, or shape into a loaf on a greased cookie sheet. Â You could also make little individual meatloaves by mounding the mixture into greased muffin tins. Some people like to “frost” the top of the loaf with a mixture of ketchup/mustard/brown sugar or horseradish/chili sauce/ketchup/mustard/brown sugar. Bake for 45 minutes.
I served this with roasted broccoli and fried new potatoes.
