Ice Cream Without an Ice Cream Maker

You might recall me mentioning the many peaches I had to deal with when the peach tree decided to go crazy last year. I STILL have peaches in the freezer, so today I decided to make peach ice cream. It’s a flavour I can rarely find in the grocery store,and I love it.  I was also feeling a bit lazy, so I decided to make ice cream without an ice cream maker. I DO have one (somewhere), but I didn’t feel like rooting about in the cupboards looking for it.

I started by making a custard base:

  • 1/3 cup sugar
  • 1 tablespoon flour
  • 1 tablespoon cornstarch
  • 1 egg yolk
  • 1 cup skim milk
  • 1 teaspoon vanilla

I combined the three dry ingredients in a saucepan, whisked in the milk and cooked over a medium heat until the mixture reached a boil, and thickened. Then I scooped out a 1/4 cup of the mixture and quickly stirred it into the yolk, then whisked the yolk mixture back into the custard and cooked it for another minute. Then I stirred in the vanilla, and put the custard into a bowl, which I put in the freezer in order to cool it quickly.

While it cooled, I took a cup of whipping cream and beat it until it was stiff. I slightly defrosted 2 cups of peaches and mashed them up. When the custard was cool, I beat it into the whipped cream, then did the same with the peaches. I scraped it into a container and put it in the freezer. Every hour, I opened the container, and stirred the contents. It took a good ten hours to harden fully (if you have an ice cream maker, this time is greatly accelerated). Ice cream made this way is harder than ice cream made in an ice cream maker.
