The large amounts of figs I am gathering from our fig tree this year is unprecedented. I have given away dozens of figs, I have added them to my salads, I eat them with my breakfast and lunch, I took in a huge bowl and left them in the lunchroom at work, I mailed some to my daughter, I add them to oatmeal, I have attempted to freeze some (don’t know how that will turn out), and today I made some fig preserves to have with cheese. These were quick and very easy to make.
I did not use a recipe or any pectin, as I only planned to make a small amount and keep it in the refrigerator.
- 4 cups chopped figs
- 1/2 cup sugar
- 1/4 cup water
I put it all in a large saucepan and brought it to a boil over medium heat, and boiled it until it was fairly thick and I could mash the figs with a fork (about 20 minutes). Then I mashed it all up, and put it in a sterilized 500ML Â sealer jar.
So tasty with sharp cheese. As I said, I only made this one jar and intend to keep in the fridge for a short period of time while I eat it. If you are making something to keep in the cupboard, make sure to sterilize your jars, sealing rings and lids and process it in a boiling water bath.
