Beet and Walnut Salad

beet and walnut salad

I like beets in a salad. I had a very nice one with cheese, beets and hazelnuts in one of the local restaurants lately. However, I bought a very large back of walnuts at Costco the other day, and I fancied using them in my supper tonight.

Crock-Pot Bean Soup

crock-pot bean soup

With a bit of planning, a crock-pot (aka a slow cooker) can provide you with a meal in a hurry. This bean soup cooked all day while I was at work, and I just had to add a couple of things when I got home. I had some lamb broth sitting around (I made it by tossing the bones from a roasted lamb neck plus a couple of garlic cloves, a quartered onion, a couple of celery stalks and carrots with enough water to cover them into a pressure cooker and cooking for about 20 minutes once it started rocking).

Almond Coleslaw

almond coleslaw

This is a super fast salad…especially if you use bagged coleslaw. It’s nice to take to work as part of a bagged lunch, or as a side dish for supper.

Almond Coleslaw

  • 4 cups of pre-made, washed coleslaw (or better, broccoslaw)
  • 1/4 – 1/2 cup toasted almonds
  • 1 chopped apple
  • 1/4 cup vinegar/oil dressing or store bought vinaigrettte (I really like Lighthouse Fuji Apple dressing)

Toss all ingredients together in a large bowl. A handful of dried cranberries would be a a nice addition, and would add some sweetness and colour.

If you prefer to make your own coleslaw, chop up cabbage finely or shred it on a grater, and grate a couple of carrots.

Spanakopita

spanakopita

Spanakopita is a delicious combination of spinach, egg and cheese in a lovely, flaky pastry envelope. You can make individual ones, or one large one. It’s a relatively quick dinner to make and is lovely with Greek salad.

Turkey Breast Cutlets and Fennel with Creamy Parmesan

turkey breast cutlet

If you are looking for food that can be prepared in a real hurry, turkey breast cutlets are ideal. You can fry them in a frying pan with some olive oil in about 10 minutes. You could serve them with a salad and bake potatoes in the microwave for a very fast meal.

This meal wasn’t fast, because I really wanted fennel cooked with cream and parmesan to be part of it:)

Potato Frittata

potato frittata

One of the things I like about baking a ham, is the leftovers. Ham sandwiches, stuffed pasta shells, pea and ham soup and tonight- just plain cold ham with potato frittata and salad.

Pumpkin Madness

carved pumpkin

It’s Hallowe’en. I live on Saanich Peninsula, where the farms grow many pumpkins. Today I set out to buy a pumpkin to carve and as a by-product, eat:)

It was crazy. Everywhere I went, they were sold out of pumpkins. I was beginning to despair when I asked the produce manager at the Co-op if he had any pumpkins. He said he was sold out, but that he had obtained a large pile yesterday from Mars Farms, just down the road. I tootled off, and picked up this fine specimen.

Fig and Goat Cheese Pizza

fig and goat cheese pizza

My daughter posted this fig and goat cheese pizza on Facebook the other day. It looked delicious, so I asked her to guest-blog it for me…and she did.

Good evening friends, tonight I’d like to talk to you about this delight for the taste buds. Yes Jack Daniels, I’m talking to you.

Take some apples and a splash of olive oil and then add some splashes of this bad boy and then then throw them on a pizza with a fig and balsamic glaze. Add actual figs, goat cheese and mozzarella and die in a pretentious coma of DELICIOUS!

Fig Preserves

bowl of figs

The large amounts of figs I am gathering from our fig tree this year is unprecedented. I have given away dozens of figs, I have added them to my salads, I eat them with my breakfast and lunch, I took in a huge bowl and left them in the lunchroom at work, I mailed some to my daughter, I add them to oatmeal, I have attempted to freeze some (don’t know how that will turn out), and today I made some fig preserves to have with cheese. These were quick and very easy to make.
