This quick and tasty spinach and strawberry salad only takes a couple of minutes to prepare.
Spinach and Strawberry Salad
- 4 cups washed spinach
- 1 cup sliced strawberries
- 1/3- 1/2 cup toasted almonds (10 minutes at 350F)
- 3-4 tablespoons fruit vinaigrette dressing (I used an apple dressing)
- 1/2 cup blueberries is a nice addition
For four people, divide the spinach among 4 bowls, and add the strawberries, almonds, blueberries and dressing.
If you have some cooked quinoa, you could sprinkle a few tablespoons over each salad for added protein.
You can substitute raspberries for the strawberries, and use a raspberry vinaigrette.
