Turkey Breast Cutlets and Fennel with Creamy Parmesan

If you are looking for food that can be prepared in a real hurry, turkey breast cutlets are ideal. You can fry them in a frying pan with some olive oil in about 10 minutes. You could serve them with a salad and bake potatoes in the microwave for a very fast meal.

This meal wasn’t fast, because I really wanted fennel cooked with cream and parmesan to be part of it:)

Fennel cooked with Cream and Parmesan

  • 1 fennel bulb, cut in about 8 wedges
  • 1/2 cup cream (I used light, but heavy cream is even better)
  • 1/4 cup parmesan
  • salt and pepper

This is very easy to make, but takes quite a while to cook. Preheat oven to 450F Lightly grease a baking dish, and put the fennel in the bottom. Add salt and pepper. Cover with the parmesan, and pour the cream over top. Put a lid on the dish, and bake for at least half an hour. Check for tenderness. If starting to soften, remove lid, lower heat to 400 and bake another half hour, checking to ensure it isn’t drying out. If not softening, cook for another 20 minutes with the lid on then remove lid and cook another half hour.

I also roasted potatoes with olive oil and balsamic vinegar, and cooked beets with lemon juice and sugar. It was very tasty.
