Chicken cooked with Apples and Onions

I wanted something different for supper the other night, so I used one of Chef Michael Smith‘s recipes, adjusted it for the ingredients I did not have, and it was delicious. It was also very quick to make, and dinner was on the table in 30 minutes.

Chicken Cooked with Apples and Onions

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 clove garlic, grated
  • 1 apple, chopped
  • 1/3 cup apple sauce (s/b apple juice/cider)
  • 1/2 tablespoon mustard (s/b grainy, I used Dijon)
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon vanilla
  • 1/2 teaspoon hot sauce (I used sriracha)

I started by peeling the potatoes, and putting them in a pot; and tossing some broccoli, baby carrots and cauliflower in olive oil and sea salt. Then I put them in the oven at 400F to roast. Next, I took a frying pan with a lid, heated it over medium high heat, and added the oil. Then the chicken breasts, cooking them until they were browned on both sides. Then I removed them from the pan and added the onions and garlic, stirring constantly for a minute or so. At this point, I put the heat on under the potatoes.  Next I added the apple to the onion/garlic mix, followed by all the other ingredients. I lowered the heat to medium low, put the chicken breasts back in, put the lid on, and let it cook for about 15 minutes. I checked after about 8 minutes, and turned the meat over. I served the meat with the apple mixture on top. It was delicious.
