Quick French Toast

French toast

I love French toast for breakfast occasionally. I used to make it for my daughter when she was a child. It’s a quick and easy breakfast, and it tastes and smells great.

Quick French Toast (1 serving)

  • 1 egg, beaten
  • 2-3 tablespoons milk
  • 1/2 tsp vanilla
  • 1/2 teaspoon cinnamon
  • 1-2 slices bread (depending on thickness)
  • 1-2 teaspoons butter

Beat the egg and milk together. Stir in the vanilla and cinnamon. Pour into a flat dish and soak the slice(s) of bread in it. Turn the bread over and allow it to soak up the milk. Melt the butter in a frying pan (I use a non-stick pan) over medium heat. When heated, add the soaked bread and cook for a minute or so. Flip over. Cook for another minute. When browned on both sides, it should be ready to serve.

You can sprinkle icing sugar over top, or serve with maple syrup or jam or dulce de leche.

Spanakopita is a delicious combination of spinach, egg and cheese in a lovely, flaky pastry envelope. You can make individual ones, or one large one. It’s a relatively quick dinner to make and is lovely with Greek salad.

Turkey Breast Cutlets and Fennel with Creamy Parmesan

If you are looking for food that can be prepared in a real hurry, turkey breast cutlets are ideal. You can fry them in a frying pan with some olive oil in about 10 minutes. You could serve them with a salad and bake potatoes in the microwave for a very fast meal.

This meal wasn’t fast, because I really wanted fennel cooked with cream and parmesan to be part of it:)

Seven Fast Dinner Ideas for Singles

One of the reasons I started this blog was when I read an article in the Globe and Mail about a young woman of 20 who was babysitting some children overnight. Their parents had asked her to make them Kraft Dinner for their supper, and she couldn’t even manage it…she didn’t drain the pasta, resulting in a watery pasta soup. Her own parents said they had never taught her to cook. It made me think about the number of young people who do not or cannot cook, and I wanted to help them. So this is 7 simple supper suggestions for young people who are in a hurry and don’t want fast food (or Kraft Dinner).  All should take about 20 minutes or less.

Pita Pizza

  • 8″ pita bread
  • 2-3 tablespoons tomato or pizza sauce
  • whatever you like for topping (I like artichokes, spinach, tomatoes and feta cheese. My daughter likes ham, mozzarella and pineapple)

Bake at 400F for 10 minutes. Check. If cheese has melted, it’s ready. If you want it browned, put it under the broiler for a minute.

Fig and Goat Cheese Pizza

My daughter posted this fig and goat cheese pizza on Facebook the other day. It looked delicious, so I asked her to guest-blog it for me…and she did.

Good evening friends, tonight I’d like to talk to you about this delight for the taste buds. Yes Jack Daniels, I’m talking to you.

Take some apples and a splash of olive oil and then add some splashes of this bad boy and then then throw them on a pizza with a fig and balsamic glaze. Add actual figs, goat cheese and mozzarella and die in a pretentious coma of DELICIOUS!

High Tea/ Afternoon Tea Ideas

I love high tea or afternoon tea.  My aunt usually takes my cousin and I for tea at The Empress every Christmas. I had some high tea ideas of my own, so when my cousin’s sister came out to visit this week, I invited them both, plus my aunt to high tea, hosted by myself and my mother in law. This is very much NOT a meal in a hurry…I prepared this well in advance, except for the crab and shrimp boats and the pork pasties…which were made by myself and my mother in law and cooked off just before serving. All the baking was spaced out over several evenings, and I made the sandwiches the night before.

It has gotten very hot in the last couple of days. When it gets hot, I like to eat things like cold ham or cold chicken with potato salad. Since I am trying to bring my weight down, I came up with this low fat potato salad, which is Weight Watchers friendly at 4 points per half cup, but still very tasty.

Roast beef just isn’t a proper roast beef dinner without Yorkshire pudding (sometimes called batters) and gravy. They use a few basic ingredients- milk, eggs, flour and salt. My daughter is always appalled if I take a shortcut and don’t make the puddings with a roast:)
