These seem to be rather popular of late, so I thought I’d try my hand at making breakfast in muffin cups. It was rather fun, and the result was quite enjoyable…like a small quiche in a tortilla shell, rather than pastry. I think I will make them again.
- flour ( 3- ten inch) or corn tortillas (12 – six inch)
- Pam or oil spray
- 6 eggs
- 3 sausages (cooked, and sliced into small rounds)
- 3-4 slices bacon (cooked crisp and crumbled)
- chopped green onion and fresh parsley
- 1/4 cup feta cheese
- 1/4 cup milk or cream
- salt and pepper to taste
The night before, I pressed corn tortillas into muffin cups, and also quartered a couple of flour tortillas and shaped them into muffin cups. I then sprayed them with a bit of Pam and baked at 400F for 20 minutes.
The next morning, I divided the sausage, bacon and feta cheese among the cups, and beat the eggs with the cream, onion, parsley, salt and pepper. I then ladled the egg mixture over top of the fillings. I put them in at 350F and baked for 20 minutes.
It made one dozen at 3 points each. I will taking them to work for a quick breakfast.
