It has gotten very hot in the last couple of days. When it gets hot, I like to eat things like cold ham or cold chicken with potato salad. Since I am trying to bring my weight down, I came up with this low fat potato salad, which is Weight Watchers friendly at 4 points per half cup, but still very tasty.
Potato salad is best made with new potatoes, in my opinion, and they are available locally right now.
- 4 cups diced, cooked potatoes
- 2 hard-boiled eggs, chopped
- 2 green onions, chopped
- 2-3 radishes, sliced thin
- 1/2 cup fat-free mayonnaise/salad dressing
- 1-2 teaspoons mustard
- 1 teaspoon curry powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- paprika and parsley for garnish
Combine the above ingredients, saving the paprika and parsley for sprinkling on top. Put in refrigerator until ready to serve.
