For a quick dinner, fish is always a good option. I can have this cod with parsley sauce, mashed potatoes and peas on the table in just over 20 minutes.

 

I start by getting the potatoes ready and get them on the stove. They take about 20 minutes. While they are cooking, I put the cod fillets in a bamboo steamer- they take about 5-8 minutes, depending on the thickness. Can be cooked over the potatoes, to save washing up:)

I make the parsley sauce in the microwave, though you can certainly make it on the stove, over a low-medium heat, stirring constantly.

  • 1 cup milk
  • 3 tablespoons flour
  • salt and pepper to taste
  • 2-3 tablespoons butter
  • 1/4 cup chopped fresh parsley

Melt the butter, and whisk in the flour. Slowly whisk in the milk and add salt and pepper. Put in microwave for about 40 seconds on high. Whisk with a wire whisk. Put in microwave for 30 seconds on high. Whisk. It may be thick enough, but if not, continue to heat and whisk in 10-20 second intervals. Then stir in the parsley. Serve over the cod.

You can add chopped green onion to the sauce, if you like. I rather like the parsley taste, so usually leave it as is.

If you have a few prawns, you could peel them and steam them as well as the fish. Serve the sauce over both.
