Beef Stroganoff Casserole

This is a simple and easy dinner to make. It takes about 45 minutes. I make it sometimes when I want a meal that takes little preparation and produces a tasty dinner.

Beef Stroganoff Casserole

  • 1/2 pound lean ground beef
  • 2 cups cooked pasta (macaroni, penne, shells)
  • 1/2 cup sour cream
  • 1 onion, chopped
  • 1 can mushroom soup
  • 1/4 cup dry breadcrumbs
  • salt and pepper

Preheat over to 375F. Put a pot of water on for the pasta, and when it boils, add salt and the pasta. Cook for 9-11 minutes, or according to package directions. Meanwhile, brown the beef in a medium saucepan, along with the chopped onion, over medium heat. Salt and pepper the meat. When the onions are soft, and the pinkness is gone from the meat, drain off any excess fat. Return to the heat, and stir in the sour cream and mushroom soup. When the pasta is cooked, drain and add to the beef mixture. Scrape it all into a casserole dish that has been sprayed with cooking spray, or lightly greased. Sprinkle the breadcrumbs on top. Bake for 30 minutes.

If you have time, 1 cup sliced, browned mushrooms is an excellent addition.
