It’s my daughter’s birthday in a couple days, and she lives too far away for me to make her a cake. Her favourite cake is carrot cake, so I decided to make carrot cupcakes and mail them to her. I’m afraid she will have to make her own cream cheese icing to frost them with.
Carrot cupcakes
- 1 1/2 cups flour
- 1/2 cup oatmeal
- 1/2 cup brown sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 raisins
- 1/4 cup chopped pecans
- 1/2 cup grated carrot
- 1/4 cup sour milk or buttermilk
- 1 egg
- 1/4 cup oil
- 1 teaspoon vanilla
- 1/2 cup crushed pineapple
Preheat oven to 400F. Combine all the dry ingredients in a large bowl. Add the liquid ingredients and stir until combined. Scoop into greased or lined muffin cups and bake for 20 minutes. When cool, can be frosted with cream cheese icing, or eaten plain.
