Quick Easy Cheesecake Recipe

Technically, this isn’t a meal in a hurry, but this quick and easy cheesecake recipe is simple to assemble and cooks in less than an hour. It could be put together the night before, and placed in the oven to bake while you do other things.

Quick, Easy Cheesecake Recipe

Begin by setting oven to 300F.

  • 1 1/4 cups crushed graham wafers
  • 1/4 cup sugar
  • 1/4 cup melted butter

Combine and press into a 9 inch pie plate.

If you have a stand mixer, combine the following in order, allowing each to mix thoroughly before adding the next:

  • 1 -8 oz package cream cheese
  • 1/2 cup sweetened condensed milk
  • 2 tablespoons lemon juice (about 1/2 large lemon)
  • 2 medium or 1 large egg
  • 1/2 cup sour cream
  • 1 tablespoon flour (optional)

Pour into crumb crust and bake for 40-45 minutes. The centre should be firm (not jiggly). For best results, turn off the heat and leave in the oven for another hour. That should keep it from cracking. Then store in refrigerator.

I made a quick topping by slicing some fresh strawberries and cooking them for a few minutes with a couple tablespoons of water and sugar. Then I thickened the juice with some cornstarch that was mixed with water. You can use cherry pie filling, or simply slice fresh fruit over it.
