Oatmeal Raisin Muffin Recipe

I really like muffins…as breakfast with a piece of fruit, as a snack or even as dessert. They are extremely simple to make, and homemade ones are much healthier and lower in calories than those giant store bought ones. Making them at home means portion control, and control of the ingredients means you are in charge of their caloric impact.

Oatmeal Raisin Muffin Recipe (makes 12)

  • 1 cup quick cooking oatmeal
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1/2 cup raisins (can substitute dates, cranberries, chopped apricots…)
  • 1 cup milk (can substitute 1 cup crushed pineapple)
  • 1 egg, slightly beaten
  • 4 tablespoons oil (can substitute applesauce)

The secret of muffins lies in not over-mixing them. Combine all the dry ingredients in one bowl.  Combine the egg, milk oil (or egg, applesauce and pineapple) in another bowl, then add to the dry ingredients. I try to stir no more than about 8 times, if possible. Doesn’t matter if it is a bit lumpy. Then scoop into greased muffin cups, or ones that have been lined with muffin cup liners. I use an ice cream scoop, but you can spoon it in, or use a quarter cup measure (whatever works).

Bake at 400F for 20 minutes.
