Tacos make for a quick meal when you are on the run. We made these in under 25 minutes. The best thing about them is that each individual can adjust them to suit their personal tastes.
Easy, Soft Chicken Tacos Recipe (for 2)
- 1 onion, sliced
- 1 bell pepper, seeded and sliced
- 2 tablespoons olive oil
- 1 chicken breast halves, sliced into strips
- refried beans, heated
- taco seasoning (can substitute chili, cumin, salt and pepper)
- salsa
- grated cheese (monterey jack, cheddar…)
- sour cream (optional)
- 6-8 6″ corn tortillas
I preheated  the oven to 225. We started by slicing the onion and pepper and frying them together over medium heat, using 1 tablespoon olive oil. While they were cooking, Steve cut up the chicken and seasoned it with taco seasoning. Then he put a small amount of oil in another frying pan and quickly heated up the tortillas, which we put in the oven to keep warm. Then he fried the chicken, while I heated the refried beans and grated the cheese.
Then we assembled our tacos and ate:)
This can be varied in many ways…substitute ground beef, or strips of steak, or fry some fish or prawns (might want to add some lime juice with fish or prawns). You  could add chopped tomatoes, lettuce, zucchini…whatever you like. You could substitute hard taco shells, which would cut your time down even more.
