This is a very quick and tasty lunch. I make this avocado and mango quesadilla with two flour tortillas, but when I am not so hungry, I just use one and fold it in half.
This is very simple. I spread the tortilla with cream cheese ( or brie, or goat cheese…any soft, spreadable cheese will do), then covered it with thin slices of avocado and mango. Then I topped it with the other tortilla, and pressed them together. I slipped it into a hot frying pan, and turned it frequently until it was slightly browned, and the cheese was melted. Then I cut it into quarters.
It’s a fast and tasty lunch. I might try making it with goat cheese and pear slices with fig jam next time.
Any suggestions, ideas or preferences?
