Best Banana Chocolate Chip Muffins

When my daughter was a teenager, it was hard to get her to eat anything remotely healthy. I came with these chocolate chip banana muffins in the hopes of getting her to eat them because of the chocolate and hoping she wouldn’t notice the flaxseed. She loved them. I’m heading off to visit her tomorrow, so thought I would bring a batch with me.

  • 1 cup flour
  • 1 cup oat bran
  • 1/2 cup flax
  • 1/2 cup sugar
  • 1/2 cup chocolate chips
  • 1 teaspoon baking soda
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 mashed bananas
  • 1/4 cup melted butter/oil/applesauce
  • 3 mashed bananas
  • 1 egg, beaten
  • 1 teaspoon vanilla

Preheat oven to 400F. Combine the dry ingredients in a large bowl. Combine the bananas with the liquid ingredients and add all at once to the dry ingredients. Combine with a fork. Do not over-mix. Portion into greased or paper lined muffin cups (I use an ice cream scoop to keep them the same size). Bake for 20 minutes.
