My husband expressed an interest in peanut butter cookies with chocolate chips  the other day. Being the obliging sort that I am, I first varied a chocolate chip recipe by substituting most of the butter with peanut butter. They were good, but we wanted something more peanut-ty. So, I tried this, which produced very nice chewy peanut butter cookies.
- 1/2 cup butter
- 1/2 cup peanut butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup peanuts, chopped
- 4 -5 peanut butter cups, chopped (or chocolate chips)
Preheat oven to 350F. Cream the butter, peanut butter and sugar(s) together until fluffy. Beat in the egg and vanilla. Mix in the flour, baking powder and salt, then stir in the peanuts and chopped peanut butter cups/chips.
Drop by the spoonful on an ungreased cookie sheet, and press lightly with a floured fork or damp fingers to flatten. Bake for about 10-12 minutes, until edges start to darken slightly. Let cool for a minute on the sheet as they are quite delicate at this point. Then cool on wire rack. Makes about 3 dozen.
