Ground beef is one the most versatile dinner meats I can think of…(well, that, and chicken breasts. )
FAST
If you can’t think of anything else, you can always brown it with some onion and garlic, and make gravy by straining off the fat, then adding beef broth and thickening it with flour or cornstarch. Serve with mashed potatoes and vegetables and you have dinner in less than 30 minutes.
PORTABLE
You can shape it into patties and toss them on the barbeque. Add some cheese near the end for a cheeseburger. Fry up some onions , mushrooms, bacon (while you wait) or slice tomatoes, chop lettuce…whatever you fancy on your burger.  The nice thing about a burger is that if you have to rush out, you can take it with you…it’s a very portable meal.
VERSATILE
If you have an hour, you can make shepherd’s pie, or if you planned ahead, you can cook cabbage rolls you made up the night before. You could make a meatloaf, or sweet and sour meatballs to serve over rice. I have a yummy recipe for hamburger soup, made in the slow cooker. I plan to put up my recipes for these shortly.
FASTER
If you are really pressed for time, you could brown your beef with some diced onion and red pepper, drain off the fat, add some water and taco seasonings. Â Serve that on heated tortilla wrappers with chopped lettuce, diced tomatoes, grated cheese, refried beans, salsa, sour cream, avocado…
