I wanted something different for supper tonight, but I also wanted it to have a sort of Asian flavour. I had a couple of chicken breasts, and I had decided to make fried rice and stir fried vegetables, so the only thing to decide was how to cook the chicken. In the end, I came up with this:
Orange Chili Chicken
- 2 chicken breasts, cut lengthwise
- 1 tablespoon oil
- salt and pepper to taste
- 1/4 onion, chopped
- 1 1 /2 cups orange juice
- 2 tablespoons marmalade
- 1 teaspoon five spice powder
- 1/4 cup sweet chili sauce
- 1 tablespoon soy sauce
- 2 tablespoons honey
- handful or cherry or grape tomatoes
- 1 tablespoon cornstarch
I put the oil in a frying pan that has a tight fitting lid, and added the chicken breasts, salt and pepper. I put the lid on a cooked on high heat for a couple of minutes, then turned the heat to medium, and turned the meat. Then I put the lid on and cooked for a couple more minutes. I repeated this until the meat was browned on all sides and mostly cooked through (about 8 minutes). Then I removed it from the pan.
I added the onion to the juices in the pan, and browned it, then added the juice, marmalade, chili sauce, five spice powder, soy and honey. After that started to bubble, I added the chicken to the mixture. Â Then followed that with the tomatoes. I let it cook for about 5-10 minutes, then combined the cornstarch with enough water to make it runny, and stirred it in. A soon as it thickened, it was ready to serve.
It was very nice and different from sauces I have made before.
