Sweet Sour Meatballs Recipe

Sweet and sour meatballs are another quick, easy ground beef recipe. They are a bit tangy, and quick to make.

Sweet Sour Meatball Recipe for 2

1/2 pound lean ground beef
1/4 cup oatmeal
1/2 medium onion, finely diced
1/4 cup breadcrumbs
2 tablespoons sweet chili sauce
1 egg
1 clove garlic, crushed
salt and pepper to taste
1/2 teaspoon dry mustard
Preheat oven to 325F. Combine the ingredients in a large bowl. Once thoroughly mixed, shape by hand into balls about one inch in diameter. Place on a cake rack, over an 8 x 8 cake pan, and cook for about 30-35 minutes. While the meatballs cooked, I prepared fried rice, and cut up some veggies for a stir-fry. I also cut the rest of the onion into wedges, diced a tomato, sliced some bell pepper into strips and drained about 1/4 cup of pineapple chunks, saving the liquid. At about the 25 minute mark, I put a tablespoon of oil into a pot and added the onion, pepper, pineapple and tomatoes. I fried them for a couple of minutes, then added:

1/2 cup tomato sauce
1/2 cup orange juice
1/4 cup pineapple juice
2 teaspoons soy sauce
2 tablespoons brown sugar
1 tablespoon sweet chili sauce.
Letting that mix together, I stir-fried the veggies in a tablespoon of oil over medium heat. When they started to look dry, I added a tablespoon of water to the wok, along with a dash of salt. The veggies only take a few minutes to cook to firm-tender. At the last minute, I mixed the meatballs into the sauce.
