Anzac Biscuits


DSCF2546My husband and I went to Australia for our 25th wedding anniversary. We loved it there…such an interesting place, with friendly people and good food. It is where we first encountered Tim-Tams, lamingtons, a vast array of meat pies and Anzac Biscuits. Love at first taste. One of the best things about Anzac biscuits is that they are very easy to make.

  • 1 cup flour
  • 1 cup oatmeal
  • 1 cup coconut (I used flaked coconut)
  • 1 cup brown sugar
  • 1/2 cup butter
  • 2 tablespoons golden syrup
  • 1 teaspoon baking soda
  • 2 tablespoons boiling water

Preheat oven to 350F. Combine the flour, oatmeal, coconut and sugar in a mixing bowl. Melt the butter together with the golden syrup. Combine the baking soda with the boiling water and add to the butter mixture. It will froth up. Add to the dry ingredients and mix well. Shape the dough into 1 inch balls and put on greased cookie sheet. Flatten with a fork. Bake for 12-15  minutes.

Makes about 3 dozen good sized cookies that are nice and chewy. Yummy!
