Easy Chicken Noodle Recipe aka Chicken Lo Mein

This is an easy chicken noodle recipe. It’s my version of chicken lo mein. It’s fairly quick to make, especially if you have 2 woks.

2 chicken breasts, cubed
1 tablespoon honey
1 tablespoon sesame oil
2 tablespoons soy sauce
2 tsp grated fresh ginger
2 teaspoons grated or crushed garlic
Combine the above in a bowl and set aside. if the honey is a bit thick, warm it for a few seconds, and it will be easier to work with.

1/2 package instant stir-fry noodles (200 grams)
1-2 tablespoons oyster sauce
1 teaspoon sesame oil
2 cups vegetables (I used cauliflower, broccoli, carrot, bell pepper, snap peas and onion) cut or sliced into bite sized pieces
Bring a pot of water to a boil, and add the noodles. Cook according to package directions (usually a couple of minutes, then drain). Stir the oyster sauce and sesame oil into the noodles and toss to coat.

Heat a tablespoon of oil in one wok, and add the chicken when hot. Cook through, and set aside. In the meantime, start heating a tablespoon of oil in the other wok over medium heat, and add the noodles. Stir frequently to prevent them from sticking. Wipe out the other wok, and set it to heat over medium heat. Add a tablespoon of oil and when hot, add the vegetables. Stir-fry quickly (you can add a bit of water…this helps keep them from scorching and retain colour).

Dish the noodles onto a plate, add the vegetables on top, and add the chicken on top of everything. Serves four.

If you can find fresh bean sprouts, they are excellent with this…add to the noodles or the vegetables in the last 30 seconds.
