These quinoa chocolate brownies are very easy to make, and are gluten-free, for those who cannot tolerate gluten. They are fairly moist, although not as fudgy as a regular brownie.
Quinoa Chocolate Brownies
- 1 cup cooked quinoa
- 1 egg
- 1/3 cup brown sugar
- 1/4 cup cocoa
- 3 tablespoons almond flour (optional- can use a gluten free flour)
- 1 tsp baking powder
- 1 1/2 tablespoons milk
- 1 1/2 tablespoons oil
- 1/2 Â teaspoon vanilla
Preheat oven to 350F. You will need to process the quinoa, so that it is not lumpy. I put the quinoa, the egg, milk, oil and vanilla in my Magic Bullet blender and processed it until it was smooth. (If you have a Magic Bullet, it’s great for making almond flour).
I put the dry ingredients into a bowl, and then poured the quinoa mixture over it, stirring until blended. Then I scraped it into an 8 x 8 pan lined with parchment paper (you can simply grease the pan, or spray it with cooking spray). I added a few pecans on top, as I wasn’t sure if I would ice it. Bake at 20-28 minutes. Makes 16 at 1 point each. If glazed, they are about 1.5 points each.
I wound up glazing this with a very simple glaze;
- 1/3 cup icing sugar
- 2 tbsp cocoa
- 1/2 tablespoon strong coffee
Mix together. if too runny, add more sugar. If too thick, add a tiny amount of coffee (or milk).
