This breakfast quesadilla makes a quick breakfast, lunch or dinner meal and is a nice alternative to the usually meat filled quesadilla.
I like to use some chopped onion and peppers scrambled with a egg, salsa, avocado and some shredded cheese-but the options are endless. I think it would be quite good with some ham or bacon too.
This is very simple to make and comes together in less than 10 minutes.
I usually start by laying a tortilla on a plate and then spread some salsa on half of the tortilla.
Then I cut up the avocado, onions and pepper. Layer the avocado on top of the salsa. Shred some cheese on top.
Throw the onions and peppers in the frying pan on medium heat with the oil of your choice. I like coconut, myself.
Break an egg into a bowl and whisk with a fork, adding some salt and pepper to taste. Then add to the frying pan with the onions and peppers. Once the eggs are cooked, place on top of the salsa-avocado-cheese mix
and fold the opposite end of the tortilla over and return to the frying pan. Heat on both sides until lightly browned and the cheese is melted.
Slide onto a plate and cut into triangles.
