It seems my whole family is interested in my food blog, and wanting to help out. First my daughter, and now Jean. My mother in law made these easy coconut macaroons today and invited me to partake of them with a cup of tea. Then she suggested sharing them on my blog. I am happy to do so.
- 2 egg whites
- 1/2 cup sugar
- 2 cups flaked or shredded coconut
- 6 glace cherries or 12 almonds
Preheat oven to 350F. You will want to cook these on the middle shelf to keep them browning evenly.
Whisk the egg whites until frothy. Whisk in the sugar and slowly add the coconut. It should be firm enough to shape into balls. Roll into 12 balls, and put them on a greased or parchment paper covered cookie sheet. Place half a cherry or an almond on top of each and press gently to flatten them. Bake for about 18 minutes, until the coconut is lightly toasted. The texture is slightly chewy and they are delicious, and about 2.5 points each.
