I associate crumb cake, lazy daisy cake and orange date cake with summer and picnics at the lake. My mom always made one of these for family gatherings of an outdoor nature.
Easy Crumb Cake
- 3/4 cup butter
- 1 cup sugar
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cloves
- 1 teaspoon cinnamon
- 1/4 teaspoon cardamon (optional)
- 1 egg
- 1 cup milk, soured with 1 tablespoon lemon juice or vinegar
- 1/2 cup raisins and 1/2 cup currants (optional)
Beat the butter and sugar until fluffy. Cut in the flour with two knives or a pastry blender, until mixture resembles cornmeal.  Scoop out one cup and set it aside  for topping. Then add the baking soda and spices and mix thoroughly. Beat the egg and add the milk to it, then add the egg/milk mixture to the the flour mixture and stir until fairly smooth.  Add the currants and raisins if desired. Spread in a greased  8 x 8 pan and sprinkle the reserved crumbs on top. Bake for 40 minutes.
