French Madeleines

I remember watching The Transporter with my daughter, and the incongruity of the discussion around Madeleines in an action movie amused us. It also made us want madeleines. I actually even bought a madeleine pan to make them properly (though you can use a muffin tin).

Madeleines

  • 3/4 cup clarified butter, lukewarm (melted butter with no sediment)
  • 2 eggs
  • 1 cup sugar
  • 1 cup flour (or 3/4 cup flour, 1/4 cup ground almonds)
  • 1 tablespoon brandy
  • 1 teaspoon lemon zest (or 1 teaspoon vanilla)

Preheat oven to 350F.  Grease the baking tins, and dust with flour. In the top of a double boiler, heat eggs and sugar, stirring constantly, until lukewarm. Remove from heat and beat until light and creamy, and it thickens. Gradually add the flour. Then mix in the melted butter, brandy and lemon zest. Put the dough in the tins and bake (8-10 minutes…if in muffin tins, a bit longer), until lightly browned.. It should make about 12-15 madeleines, at between 4 and 5 points.

I dusted mine with icing sugar.
