I don’t do a lot of gluten-free baking, but I know a few people who are gluten intolerant, so occasionally I make a foray into that territory. Today’s gluten free apple scones are a result of one such attempt.
Apple Scones (gluten free)
- 2 cups all purpose baking mix
- 1 1/2 teaspoons gluten free baking powder
- 1/4 teaspoon salt
- 2 tbsp sugar
- 1 teaspoon cinnamon
- 1/4 cup coconut oil (solid form)
- 1 medium apples, chopped
- 1/2 cup milk
Preheat over to 400F. Grease or put parchment paper on a baking sheet. Combine the baking mix, baking powder, salt and sugar in a bowl. Cut in the coconut oil, and rub it into the flour mixture until it resembles fine breadcrumbs. Â Stir in the apple and milk, using a fork, then use your hands to form it into a dough.Put it on the baking sheet, and flatten it into a round shape about 1/2 inch thick. With a knife, mark it into 8 wedges (not cutting through). Brush with cream and sprinkle with raw sugar. Bake for 12-15 minutes.
Verdict: pretty tasty. The gluten free baking mix makes it an unusual colour, but the important thing is taste, imho. If anyone has any suggestions for variation or improvement, I’d love to see them.
Notes: if you cannot find gluten free baking powder, you can make your own by combining:
- 1 teaspoon baking soda
- 2 teaspoons cream of tartar
- 1 teaspoon cornstarch (optional)
