Easy Vanilla Slice

I’ve always enjoyed this dessert, since first encountering it years ago on a trip to England.  This easy vanilla slice is made with frozen puff pastry, and ultra low fat Cool Whip, and it is relatively Weight Watchers friendly. You can easily change the Cool Whip for custard if you prefer…or whipped cream if you aren’t counting calories.

  • 1/2 package frozen puff pastry (about 200 grams)
  • 3 tablespoons strawberry jam
  • 8 tablespoons Cool Whip, or custard or whipped cream
  • 4 tablespoons icing sugar
  • 1 tablespoon cream
  • 1/2 teaspoon vanilla

Preheat oven to 400F. Roll the thawed puff pastry into a rectangle about 9 inches by 5 inches. Prick it with a fork all over. Bake on ungreased baking sheet for about 20 minutes. Allow to cool. Combine the icing sugar, vanilla and cream into a glaze, and spread over the top. With a bread knife, cut through the middle of the pastry and lift off the glazed top. Spread the inside with the strawberry jam and cool whip, then put the top back on. You can drizzle it with a small amount of melted chocolate. Cut into 6 slices.  6 points each.
