When you are in a hurry, beef stir fry with vegetables over rice or noodles is a fast dinner choice. Time wise it should take about 20-25 minutes…about the time for rice to cook.
- top sirloin steak
- 3-4 cups sliced vegetables (pepper, carrot, celery, snap/snow peas, cauliflower, broccoli, baby corn cobs,bok choy…)
You can marinate the steak beforehand for extra flavour. ( I had the meat thinly sliced, and put it in a ziplock bag with bulgogi sauce for an hour before cooking. Teriyaki sauce also works nicely.) If not, season it with salt and pepper. Heat a small amount of oil ( about a tablespoon) in a wok, then quickly fry the beef (1-2 minutes). Remove  from heat, and clean the wok.
Heat the wok, and add 1-2 tablespoons oil. When hot, add the vegetables, and stir quickly. I find it helps to periodically add a tablespoon of water to the vegetables…it seems to help them remain crisp-tender and retain their bright colour.  This should take about 4-5 minutes. If you like, add a dash of oyster sauce at the end…or a bit of ginger.
Remove from heat, add meat and serve over rice or noodles.
