I got a bit experimental the other day, and concocted these bars. I was quite pleased with the end result. They don’t actually have a name, as there was no actual recipe, so I am calling them Caramel Coconut Bars.
- 6-8 graham wafers (enough to line an 8×8 pan)
- 1/4 cup butter
- 1 cup brown sugar
- 1/4 cup cream
- 1 cup coconut
- 1/2 cup sweetened condensed milk
- 1/2 cup chopped nuts
- 1 cup chocolate chips
preheat oven to 350F. Line an 8×8 pan with parchment paper, or grease it with butter or cooking spray. Make a layer of graham wafers on the bottom. Then put the butter, sugar and cream into a saucepan over medium heat and bring to a boil. Boil 2 minutes, stirring frequently, then pour the sauce over the graham wafers.Combine the coconut and sweetened condensed milk, and layer it on top. Sprinkle the nuts on top of that, then cover with a layer of chocolate chips. Bake for 20 minutes. Spread the melted chocolate with the back of a spoon until it is evenly spread over the square. Cool and cut. This is very sweet, so smaller pieces would be best. 24 pieces would be just under 5 points each.
I think you could substitute thin chocolate cookies, gingersnaps, oatmeal cookies, or vanilla wafers for the graham crackers. A 1/2 cup of chopped glace cherries over the nuts would add a nice touch, and a bit of colour. If you were to use gingersnaps, then a 1/4 to 1/2 cup of chopped candied ginger would add another burst of flavour.
