Caramel Apple Coffee Cake

This caramel apple coffee cake is a quick and easy dessert. You could also make it for breakfast, if you so desired. It is a yeast bread, but is not fussy or complicated. It’s very simple.

  •  1 3/4 cups flour
  • 4 1/2 teaspoons yeast
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 medium apple, peeled and diced fine
  • 2 tablespoons oil (or melted butter)
  • 3/4 cup very warm water (130F)
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons golden syrup (or corn syrup, maple syrup, honey…)
  • 2 tablespoons melted butter
  • 1/4 cup raisins (or pecans, walnuts, cranberries…)
  • 8 almonds, sliced

Preheat oven to 350F.  Grease a 9 inch pie plate. Combine the flour, yeast, sugar, salt and apple in a bowl.  In another bowl, combine the brown sugar, cinnamon, syrup, butter, raisins and almonds. Heat the water to the correct temperature, and add it to the flour, along with the oil. Stir quickly into a soft dough, and put it into the pie plate. Flatten it, and spread the syrup/raisin mixture on top.  Bake for 20-30 minutes. Let sit for a few minutes and serve warm. Makes 8 servings of 5 Weight watcher points each.
