Sour Cream Coffee Cake

My husband loves sour cream coffee cake, and it makes a nice dessert for company.

  • 1 cup butter
  • 1/1/2 cups sugar
  • 1 cup sour cream
  • 2 eggs, beaten
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dried mixed fruit or raisins/cranberries(optional)
  • 1 cup chopped nuts
  • 4 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cardamon (optional)

Preheat oven to 350F. Cream the butter and sugar, then add in the sour cream, eggs, and vanilla.  Combine the dry ingredients, and add to the creamed mixture, beating well. If you wish to add mixed fruit, stir it in. Combine the nuts, sugar and spice(s).  Put half the batter into a greased and floured Bundt pan. Make a trough in the dough, and fill it with 3/4 of the nut mixture- do not let it touch the side of the pan. Cover with the rest of the batter, and sprinkle the rest of the nut mixture on top. Bake for 45 minutes. Allow to cool before inverting onto a plate. Drizzle icing on top, and decorate with nuts or cherries.
