Rice Wraps with peanut dipping sauce

I’ve never made these before, but for some reason today I really fancied the idea of rice wraps with peanut dipping sauce. I nipped off to the grocery store for wrappers, bean sprouts and a lime. I had everything else.

  • rice wrappers
  • bean sprouts, cleaned
  • grated carrot
  • chopped cucumber
  • chopped parsley
  • diced cooked prawns
  • 1/4 cup peanut butter
  • 1 tablespoon sweet chili sauce
  • juice and zest of small lime

I softened the wrappers by dipping them in a pie plate filled with warm water for a few seconds (10 maybe?). Then I put a load of sprouts in the centre, topped it with the carrot, cucumber, parsley and prawns and rolled it up, tucking in the ends as I rolled. I made 6 for an appetizer and combined the peanut butter, lime and chili sauce for the dipping sauce. I was pleased with the result, but plan to experiment more with different fillings.
