When you are looking for something to make in a hurry, ground beef is one of the go-to meats we tend to choose. Like chicken, it is very versatile and lends itself to a number of dishes. When in a rush, I sometimes like to serve tacos/tortillas. It is fairly quick to prepare and tasty to eat.
For these I usually toss about 3/4 pound lean ground beef in a large frying pan or wok, and add one chopped onion and half of a chopped red or green bell pepper. I season it with taco seasoning, and while it browns, I dice up a tomato or two, along with an avocado, shred lettuce and grate cheese (cheddar, monteray jack, mozzarella…whatever is around), and get salsa, refried beans and sour cream handy. Then I start putting corn tortillas in a hot frying pan and heating them until they start to puff up a bit. I keep them warm in the oven until ready to dish up.
We each prepare our own…just take a hot tortilla and load it up with everything you want, roll it up and eat it. This made about 10 tortillas, and took about 25 minutes, start to finish.
