Spinach strawberry salad is very quick to prepare, tasty and eye-catching. It is also nicely nutritious:)
- 2 cups washed, torn spinach
- 10-12 strawberries
- 10-12 pecans, lightly toasted
- 2-3 tablespoons crumbled feta cheese
- 1 tablespoon extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
Put the spinach in the serving bowls, top with sliced strawberries, pecans and feta. Combine the oil, vinegar and honey in a small jar and shake. Lightly dress the salad.
You could substitute hazelnuts for the pecans, or raspberries for the strawberries. Blueberries and nectarines would make a nice addition.
