Today was a little bit hectic first thing in the morning…getting the recycling out to the curb, emptying the dishwasher, making my breakfast and prepping a lunch. All of a sudden it was time to dash, and I rushed out of the house and was halfway to work before I realized I hadn’t taken anything out for supper. By the end of the day, I was tired and hot, so I decided to buy a cooked chicken , fry some potatoes and experiment with this watermelon cucumber salad.
- 2 cups watermelon cubes
- 1 cup cucumber cubes
- 2 tablespoons mint leaves, chopped
- juice and rind of a small lime
- 1 tablespoon olive oil
The amount listed above are approximate. Â I cubed half of a small watermelon, and half of an English cucumber, threw in the chopped mint, grated the lime rind over it, squeezed the lime juice over it and sprinkled the olive oil over it and then tossed it about with a couple of spoons. It was very light and refreshing. I will definitely make it again, perhaps adding half a cup of quinoa and a quarter cup of crumbled feta cheese. I think they would complement it nicely. Makes 3 one cup servings at one WW point each, or, if you left out the oil (wouldn’t hurt), it would be zero points.
What do you think? Any suggestions, additions, deletions?
I made mine with added feta and pine nuts. Was very delightful.
