Egg and Cheese Recipes- Omelette

Eggs and cheese recipes are an excellent meal if you are pressed for time. They call for ingredients that one usually has in the house, and are very quick to make.

Omelettes (for one person)

  • 2 eggs
  • 2 teaspoons butter (or oil)
  • salt and pepper
  • 2 tablespoons grated cheese (I use cheddar)
  • slice of ham, tablespoon of bell pepper, tablespoon of green onion

Omelettes are very simple to make. Beat the eggs and add salt and pepper (you can also add parsley and oregano if you like). Heat a frying pan and add the butter (or oil). Once the butter has melted, and is starting to bubble, add the ham, pepper and onion, if using, and let them heat through. Add the egg, and tip the pan until the egg covers the pan.You can gently lift the edges to allow more of the egg to run underneath.

Once it is partially cooked and only a small amount on the top is still raw, sprinkle the cheese over it. Then slide a spatula/turner underneath and flip one half so that it folds over the other.

When the bottom is starting to brown, slide it onto a plate.

A green salad with a nice, tasty omelette is a quick and healthy meal.
